When it comes to getting the kids ready and out the door every morning, I'm all about anything that will make our lives easier. When a former co-worker recommended this recipe it was a total no brainer, and has since become our go-to breakfast staple during the work weeks.

9 Large Eggs
Whole Milk
Ham
Spinach
Shredded
Cheese
Salt & Pepper

Instructions
Start by preheating your oven to 350º.
Crack and combine 9 eggs in a measuring cup/bowl. I use a 4-cup measuring cup so that I have extra room to stir when adding in the milk in.
Add 3/4 cup milk then mix everything together with a fork until the mixture is nice and frothy.
Pour your mix evenly into a muffin/cupcake pan.
Chop your spinach and ham into thin slices. (or just tear it up, no need to get fancy if you don't feel like it)
Sprinkle in the shredded cheese, ham, and spinach, then spritz with salt and pepper and you're golden.
Bake for 20 min and let cool before serving or storing.

After letting them cool, I transfer to tupperware and freeze them for the week. We pull out 2-3 every morning and reheat for 2.5min. Frankie and Jude love them, and it really makes mornings easy.
What I love is the easy and flexibility. You can add anything to the cups to keep the flavors diverse and interesting for yours or your families' preferences.
