Easy Egg Bites Your Toddler Will Love

by - April 29, 2020

When it comes to getting the kids ready and out the door every morning, I'm all about anything that will make our lives easier. When a former co-worker recommended this recipe it was a total no brainer, and has since become our go-to breakfast staple during the work weeks.

Recipe
9 Large Eggs
Whole Milk
Ham
Spinach
Shredded
Cheese
Salt & Pepper

Cook time
25 min prep & bake

Reheat time
2.5 min in microwave

Instructions

  • Start by preheating your oven to 350º.
  • Crack and combine 9 eggs in a measuring cup/bowl. I use a 4-cup measuring cup so that I have extra room to stir when adding in the milk in.
  • Add 3/4 cup milk then mix everything together with a fork until the mixture is nice and frothy.
  • Pour your mix evenly into a muffin/cupcake pan.
  • Chop your spinach and ham into thin slices. (or just tear it up, no need to get fancy if you don't feel like it)
  • Sprinkle in the shredded cheese, ham, and spinach, then spritz with salt and pepper and you're golden.
  • Bake for 20 min and let cool before serving or storing.

After letting them cool, I transfer to tupperware and freeze them for the week. We pull out 2-3 every morning and reheat for 2.5min. Frankie and Jude love them, and it really makes mornings easy.

What I love is the easy and flexibility. You can add anything to the cups to keep the flavors diverse and interesting for yours or your families' preferences.
